Slow Cooker Salsa Chicken

I made this for lunch for the work week this week!  :)
It has: chicken, salsa, taco seasoning, diced tomatoes, celery, onions, carrots and we usually eat it on tortillas with shredded cheese and sour cream.

Snow, January 2013!

We got snow on January 17th, quite a bit of snow, actually...and here is some of what has been involved in our days since:

Well...our power went out, but only overnight, so that was a good thing that it wasn't any longer than that!

The kids were okay with it though because they got to build a snowman (and a few photos are in the Members Area of their fun time in the snow/getting ready to play in the snow)!

We also made tasty treats after the power came back on (we made fudge and wontons...this was my first attempt at wontons, and the kids loved them)!  The wontons have a cream cheese and green onion mixture inside of the cooked wonton wraps.  Yummy!  :)

A Great Weekend and a Tasty Treat!

breannsfielddaySo...this past weekend was super, we had such a great time!

Breann had her County Field Day and placed third in Relay this past Friday.

Then later in the weekend, I made a veggie bar that my mom gave me the recipe for...and it was so yummy, we all loved it!! =-)

1. It is crescent rolls lined on a cookie sheet and bake them according to the directions. (unroll the crescent rolls when you place them on the cookie sheet to bake).

2. Then you mix a half a packet of dry Ranch dip mix and half a bar of cream cheese and 1/4 cup of mayonnaise together.

3. Let the crescent rolls completely cool before you top them with anything. Then after the crescent rolls are cool spread the Ranch dip mixture over the crescent rolls.

4. Dice up vegetables that you would like (I used tomatoes, broccoli, green onions, etc.) and you also spread shredded cheddar cheese ontop of the mixture along with the vegetables.

And...back to the weekend update...later in the weekend we also went to the movies and took the kids out for ice cream before time for the movie.

And...Sunday we went to church and then had subs for lunch.

It was a blessed weekend!

Pie Anyone?

Well, Justin is still working late into the night from the storm that hit Wednesday and the kids and I went to the grocery store yesterday and picked up some groceries and I decided to make a Taco Pie.  Yes, that's right...Taco Pie...that's how it really looks!

The recipe:

1. I preheat my oven at 375 degrees and I begin by preparing my pie shell.  I take about eight crescrent rolls and separate them into a round pan and make it to where half of each of their sides is covering the bottom of the pan (to where the bottom of the pan is covered with the crescent rolls...this is my pie shell)...the other half of each of the crescent roll's sides is hanging over the side of the pan.

2. Then I take and brown my ground beef and mix some taco seasoning in it and also in a separate pan I cook some taco rice.

3. Then I mix together the cooked ground beef, taco rice, and refried beans.

4. I add the mixture to my crescent roll pie shell, add shredded cheese to the top, fold the other half of the crescent rolls (that are hanging over the side of the pan) in to form what looks like the top of a pie shell.  Bake for about 20-25 minutes and voila...a taco pie!

The kids loved it enough to ask for seconds and Justin even had it for dinner when he came home last night.
